“Chestnut mushroom” means three different things depending on where you shop, so here is exactly what you are getting. This culture is Pholiota adiposa, the chestnut mushroom of US cultivation, also called cinnamon cap. It is not the brown Agaricus bisporus sold as “chestnut mushroom” in UK and European supermarkets — that is cremini, crimini, baby bella or Swiss brown. It is also not Cyclocybe aegerita, which is sometimes called chestnut but which we sell separately as Black Poplar / Pioppino.

Tried this one specifically because I wanted a true Pholiota and not one of the other mushrooms sold under the same common name. The culture looked clean, took to grain without drama, and the growth was steady. Fruited it on hardwood and got dense little clusters with nice brown caps. Flavor was pleasantly nutty and held up well in a pan sauce. I would buy this again for small gourmet runs.
