Elm Oyster is one of the most commonly mislabelled cultures on the market. Despite the name, it is not a Pleurotus at all — this culture is true Hypsizygus ulmarius, not Pleurotus ulmarius (sometimes sold as ElmA) and not Pleurotus ostreatus, which several suppliers list it as by mistake. It is also a different mushroom from Beech / Shimeji (Hypsizygus tessellatus), which shares the genus but not the species.
