True Hypsizygus ulmarius — Know What You Are Buying

Elm Oyster is one of the most commonly mislabelled cultures on the market. Despite the name, it is not a Pleurotus at all — this culture is true Hypsizygus ulmarius, not Pleurotus ulmarius (sometimes sold as ElmA) and not Pleurotus ostreatus, which several suppliers list it as by mistake. It is also a different mushroom from Beech / Shimeji (Hypsizygus tessellatus), which shares the genus but not the species.

Why Choose Elm Oyster / White Elm Mushrooms?

  • Attractive Broad Caps – Produces handsome cream, beige, or light tan caps with a classic gourmet mushroom appearance.
  • Mild, Savory Flavor – Offers a delicate, pleasant taste that works well in a wide variety of recipes.
  • Tender, Meaty Texture – Holds up nicely when sautéed, roasted, or incorporated into cooked dishes.
  • Culinary Versatility – Excellent for stir-fries, soups, pasta, rice dishes, sauces, and sautéed recipes.
  • Rewarding to Cultivate – A great option for growers looking to expand their collection with a distinctive edible mushroom.

Lab-Tested Liquid Culture for Reliable Growth

Our Grospore Elm Oyster / White Elm Liquid Culture Syringe contains vigorous living mycelium, lab-tested and prepared in our ISO-certified cleanroom to support healthy colonization and dependable cultivation performance.

Each 10ml (10cc) syringe offers:

  • Live Mycelium, Not Spores – This is a liquid culture (LC) syringe, not a spore syringe. There is no germination step, so colonization begins as soon as you inoculate.
  • Lab-Tested & ISO Cleanroom Prepared – Every batch is lab-tested for purity and prepared in an ISO-certified cleanroom, so what reaches you is clean, contaminant-free and viable.
  • Faster Colonization – Active mycelium helps promote efficient colonization compared with starting from spores.
  • Convenient 10ml (10cc) Syringe – 10cc and 10ml are the same volume. Easy to use with appropriately prepared sterile growing media, grain spawn or agar.
  • Verified Genetics – Cloned, isolated Hypsizygus ulmarius mycelium — the true White Elm, correctly identified.

How to Grow Elm Oyster / White Elm Mushrooms

  1. Prepare the Substrate – Hardwood sawdust-based substrates and other appropriately prepared lignocellulosic materials are commonly used for Elm Oyster cultivation. The same syringe can also be used to inoculate sterilized grain spawn, grain jars or bags, or an agar plate.
  2. Inoculate – Inject 2–3cc (2–3ml) per grain jar or bag through a self-healing injection port, using sterile technique in a still air box or in front of a laminar flow hood.
  3. Colonize – Allow the mycelium to fully colonize the substrate under suitable incubation conditions.
  4. Initiate Fruiting – Once fully colonized, provide appropriate humidity, fresh-air exchange, indirect light, and suitable fruiting temperatures.
  5. Harvest & Enjoy – Harvest while the caps are firm and well developed for the best texture and culinary quality.

Storage, Shelf Life & Shipping

Refrigerate your liquid culture syringe on arrival. Stored at 35–45°F (2–7°C), upright and out of direct light, it stays viable for 4–6 months. Orders ship fast from Oregon in discreet packaging, with tracking on every order and a 30-day return policy on unused items.

Reached out before ordering because I wanted to confirm this was true Hypsizygus ulmarius, and support was fantastic. They answered quickly, clearly, and with real detail. That kind of help made me feel great about buying from them.

Having rotated a lot of gourmet cultures over the years, I mainly care about how they actually perform once they hit grain. This one gave me steady, even colonization and stayed clean through transfer. Fruiting was reliable too, with good sized caps and a nice dense texture compared with a few elm cultures I have tried before. It has become one of the easier varieties for me to keep in the lineup.

  6. Anonymous

Storage and inoculation steps were clearly explained. Easy to follow without guessing.

  7. Lena P.

Packed well, shipped quickly, and the syringe was easy to divide between a few grain jars. I liked that the storage info was clear, since that is the kind of thing newer growers usually have to dig around for. Colonization started sooner than my last culture from another shop, so for me this felt like good value and less hassle overall.

After ordering cultures here on and off for a few years, I’ve learned that good customer service matters just as much as what shows up in the box. I emailed before buying this one because elm oyster gets mislabeled all over the place, and I wanted to confirm it was actually Hypsizygus ulmarius. The reply was direct, specific, and sounded like it came from someone who knew the difference instead of pasting a canned answer. I also asked about storage since I was not using it the same week, and they gave me a clear temperature range and timeline that matched the insert. That kind of consistency is why I keep coming back. The culture itself looked healthy, but the reason I felt confident ordering again was how professionally my questions were handled.

Picked this up for my brother because he likes trying unusual gourmet varieties, and I wanted something a little more thoughtful than another kitchen gadget. From a gift standpoint, this felt like solid value. The syringe size was enough for him to do multiple jars, so it did not come across like an expensive novelty that disappears in one use. He also appreciated that it was a liquid culture rather than spores, since that meant less waiting and less guesswork for the same money. What made it feel worth the price to me was that it was clearly labeled as the true species, which matters when you are buying for someone who actually knows mushrooms. He said the culture looked healthy and gave him a clean start, so I felt like the gift delivered real usefulness.

For the price, this was a sensible buy. The syringe had enough active culture to start multiple jars, and I saw clean growth without wasting time on spores. That makes the cost easier to justify for small home grows.

  13. Aisling Byrne

Visible mycelial threads from day one, even suspension, and both jars colonized evenly without odd sectors.

  14. Mireia Solé

Packaging was tidy, insulated, and blessedly free of drama. The syringe was capped well, nothing leaked, and everything looked clean on arrival. In the world of mailed biology projects, that already feels like a minor miracle.

Picked this up for my brother since he’s the one who actually grows mushrooms, and he specifically mentioned how easy the instructions were to follow. He liked that the storage temperature, inoculation amount, and basic steps were all spelled out plainly instead of assuming prior experience. I can’t speak to the growing side myself, but as a gift buyer, it was nice knowing he wouldn’t have to hunt around for missing details.
