The species appears in catalogues as Hypsizygus tessellatus, Hypsizygus tessulatus and Hypsizygus marmoreus — all the same mushroom. Brown Beech mushrooms are especially popular in Asian-inspired cuisine and are valued by growers and chefs for their attractive clustered growth, excellent cooking texture, and distinctive savory taste.
“Shimeji” is an umbrella term covering several unrelated mushrooms, so it is worth being precise. This culture is Hypsizygus tessellatus, the cultivable brown beech mushroom. It is not Lyophyllum shimeji, the true hon-shimeji, which is mycorrhizal and cannot be grown from liquid culture at all — retail packs labelled “hon shimeji” are almost always this species. It is also not the white bunapi / alba clamshell variety, which is a separate cultivar.

Compared with my previous brown beech attempt from another supplier, this syringe was more consistent. That one colonized unevenly and one jar stalled early. With this, both grain jars started clean and filled in at about the same pace. I moved them to supplemented sawdust after that and the transfer took without issues. Not the fastest culture I have used, but it was steady and predictable, which mattered more for this variety.

The last one had sparse visible strands and stalled on one of three grain jars at roughly the 40 percent mark. This culture showed evenly suspended mycelium after a gentle swirl, inoculated cleanly, and all three jars moved at a similar pace. Not miraculous, just much more uniform, which matters when you are trying to diagnose technique instead of genetics.

What I tracked most was storage behavior. I refrigerated it upright at about 39F, kept it in the original sleeve, and waited just under seven weeks before using it. The liquid stayed evenly translucent with visible mycelial strands and no odd sediment ring at the plunger end. When I finally inoculated grain, it still looked vigorous. For anyone who does not use cultures immediately, the shelf life here felt honestly accurate.

The syringe had visible mycelium, the jars took off evenly, and I appreciated that the labeling made it clear this was the brown beech type and not the white variety.
