Brown Beech / Buna Shimeji (Hypsizygus tessellatus) Liquid Culture Syringe – 10ml / 10cc

Grow a Delicate Gourmet Mushroom with Exceptional Texture

Cultivate Brown Beech mushrooms with our premium Grospore 10ml (10cc) liquid culture syringe. Also known as Brown Shimeji, buna shimeji, beech mushroom, brown clamshell or seafood mushroom, these gourmet mushrooms are recognized for their small brown caps, slender pale stems, firm texture, and rich, nutty flavor.

The species appears in catalogues as Hypsizygus tessellatus, Hypsizygus tessulatus and Hypsizygus marmoreus — all the same mushroom. Brown Beech mushrooms are especially popular in Asian-inspired cuisine and are valued by growers and chefs for their attractive clustered growth, excellent cooking texture, and distinctive savory taste.

Brown Beech, Not True Hon-Shimeji — and Not the White Variety

“Shimeji” is an umbrella term covering several unrelated mushrooms, so it is worth being precise. This culture is Hypsizygus tessellatus, the cultivable brown beech mushroom. It is not Lyophyllum shimeji, the true hon-shimeji, which is mycorrhizal and cannot be grown from liquid culture at all — retail packs labelled “hon shimeji” are almost always this species. It is also not the white bunapi / alba clamshell variety, which is a separate cultivar.

Why Choose Brown Beech / Buna Shimeji Mushrooms?

  • Distinctive Brown Caps – Produces compact clusters of small caramel-brown caps with slender cream-colored stems.
  • Rich, Nutty Flavor – Offers a savory, slightly nutty taste that becomes especially enjoyable when cooked.
  • Firm, Crisp Texture – Brown Beech mushrooms maintain a satisfying bite and hold up well in a wide variety of dishes.
  • Gourmet Culinary Favorite – Excellent for stir-fries, soups, noodle dishes, hot pots, rice bowls, pasta, and sautéed recipes.
  • Unique Cluster Formation – Their dense, elegant clusters make Brown Beech mushrooms both visually appealing and rewarding to cultivate.

Lab-Tested Liquid Culture for Reliable Growth

Our Grospore Brown Beech / Buna Shimeji Liquid Culture Syringe contains vigorous living mycelium, lab-tested and prepared in our ISO-certified cleanroom to support healthy colonization and dependable cultivation performance.

Each 10ml (10cc) syringe offers:

  • Live Mycelium, Not Spores – This is a liquid culture (LC) syringe, not a spore syringe. There is no germination step, so colonization begins as soon as you inoculate.
  • Lab-Tested & ISO Cleanroom Prepared – Every batch is lab-tested for purity and prepared in an ISO-certified cleanroom, so what reaches you is clean, contaminant-free and viable.
  • Faster Colonization – Active mycelium helps promote efficient colonization compared with starting from spores.
  • Convenient 10ml (10cc) Syringe – 10cc and 10ml are the same volume. Easy to use with appropriately prepared sterile growing media, grain spawn or agar.
  • Verified Genetics – Cloned, isolated Hypsizygus tessellatus mycelium — correctly identified brown beech, not a mislabelled shimeji.

How to Grow Brown Beech / Buna Shimeji Mushrooms

  1. Prepare the Substrate – Hardwood sawdust-based substrates supplemented with suitable nutrients are commonly used for Brown Beech cultivation. The same syringe can also be used to inoculate sterilized grain spawn, grain jars or bags, or an agar plate.
  2. Inoculate – Inject 2–3cc (2–3ml) per grain jar or bag through a self-healing injection port, using sterile technique in a still air box or in front of a laminar flow hood.
  3. Colonize – Allow the mycelium to fully colonize the substrate under suitable incubation conditions.
  4. Initiate Fruiting – Once fully colonized, provide appropriate humidity, fresh-air exchange, indirect light, and suitable cooler fruiting temperatures.
  5. Harvest & Enjoy – Harvest clusters when the caps are well formed and the stems remain firm for the best texture and culinary quality.

Refrigerate your liquid culture syringe on arrival. Stored at 35–45°F (2–7°C), upright and out of direct light, it stays viable for 4–6 months. Orders ship fast from Oregon in discreet packaging, with tracking on every order and a 30-day return policy on unused items.

  1. Gordon Talbot

For a small restaurant trial, I wanted a brown beech culture I could run on two supplemented hardwood blocks and compare for consistency. I was skeptical because anything labeled shimeji tends to get marketed loosely, and I did not want to waste time on something misidentified or weak. This one changed my mind. I used about 2.5cc per block under a hood, then let both runs colonize side by side. Growth looked even, the broth was clean, and neither block threw obvious contamination. What won me over was the fruiting stage. The clusters came in compact, with the brown caps and firm stems I was aiming for for noodle bowls and quick sautés. It ended up being a very practical culture for a menu test, not just a novelty grow.

  2. Radu Enache

Didn’t expect to buy this twice, but the first syringe stayed clean, so I reordered.

  3. Colleen Farrow

Picked this up for my son because he wanted to trial brown beech on two small hardwood blocks for a dinner special. He said it took cleanly and gave him exactly the clustered texture and flavor he was after.

  4. cliff_spawnlab

For a side-by-side trial, I put 2.5cc into one sterilized grain bag and expanded the rest on agar. Both stayed clean, with even-looking mycelial strands in suspension and no odd smell on first use. Exactly what I wanted for a brown beech test run.

  5. Meilin Zhou

Bought this for my brother because he’s the mushroom tinkerer in the family, not me. Packaging looked professional, syringe was sealed well, and everything arrived tidy and cold. He texted me, “finally, a gift with proper insulation.”

  6. Grant Weller

Coming back for another syringe of brown beech was an easy call for me. I keep a small rotation of gourmet varieties going through the year, and I only reorder the ones that stay consistent from batch to batch. My first syringe gave me clean starts on grain and enough confidence to work it into my regular lineup, so this time I did not hesitate. The second order looked just as healthy, stored well in the fridge, and performed the way I expected once I got around to using it. That kind of repeatability is what matters when you buy cultures more than once. Plenty of products are fine the first time and disappointing the second. This one has been steady, which is exactly why I reordered and why I probably will again.

Opening the box felt unusually calm, which is not the normal emotional arc of receiving live culture through the mail. The packaging did most of the work here. Syringe was secured well, cap was tight, needle was individually wrapped, and nothing inside looked like it had spent the week being punted across a warehouse. The insulation was sensible instead of theatrical, which I appreciated. No mountain of useless filler, no mystery dampness, no loose parts rolling around like a tiny maraca. Everything was clean, organized, and easy to inspect before putting it away. I have ordered enough hobby supplies to know that competent packaging is rarer than it should be. This arrived looking like someone had actually pictured the box being handled by humans, which was almost touching.

After buying cultures here on and off for years, this one felt worth the money. Clean syringe, solid growth, and enough usable liquid for multiple jars without feeling like I paid premium pricing for a tiny test.

Shipping was quick and the syringe was packed well with no leaks. I liked that the storage info was straightforward, so I just put it in the fridge until my bags were ready. Used it on supplemented sawdust and saw healthy growth after transfer. These seem a little fussier on fruiting temps than oysters, but the culture itself arrived in good shape.

Ran super clean and colonized quick. Clusters came out legit.

After buying cultures for a few seasons, I really notice when the directions are useful instead of filler. The storage notes and inoculation guidance here were brief, specific, and easy to follow without second-guessing.

Compared with my previous brown shimeji attempt from another seller, this syringe had noticeably denser mycelial strands and a cleaner, more even suspension. I used the same inoculation amount on identical sterilized grain jars, so the comparison felt fair. The earlier culture lagged and one jar turned questionable by week two. This one showed faster recovery after injection, steadier colonization across both jars, and no off odors when I checked them.
